Selecting
Choose carrots that are straight and firm, with a smooth exterior. The color should be bright orange, indicating a high beta-carotene content (which the human body converts into vitamin A). If feathery leaf tops are attached, they should be fresh-looking and green.
Storing
Remove the tops if still attached and store unwashed carrots in your refrigerator vegetable drawer, away from fruits. They can stay fresh for up to a month refrigerated if you wrap them in moist paper and put them in a perforated bag.
Eating
Wash, trim and peel carrots before eating. They’re delicious raw as a snack and chopped, grated or sliced on a salad.
Carrots lose very little nutritional value during cooking. You can boil, steam, grill, sauté and stir-fry carrots as a side dish or add them to other dishes in preparation.
