About Limes
- Smaller than lemons, limes measure only 3 to 5 cm in diameter and have a thin, smooth, dark-green skin
- They have a strong, rather floral fragrance
- The green flesh and juice is even tarter than lemon

Selecting
Select bright-green limes that are heavy for their size, showing that they are full of juice. Go for thin-skinned limes too, because they will contain more flesh and juice. Avoid fruit with rough skins or blemishes.
Storing
Limes perish faster than other citrus fruits but you can keep them for a week or so at room temperature, out of direct sunlight. They will stay fresh for a couple of weeks in your refrigerator. Any longer, and they may start to lose flavor.
Eating
Limes are too bitter to be eaten from the hand but the juice adds a wonderful light and refreshing flavor (without adding fat or many calories) to sweet and savory dishes. Grated peel adds flavor to cooked and baked meals. But use limes sparingly because they have a stronger flavor than lemons.
